These easy Breakfast Sandwiches are going to make your morning better. Crusty bread topped with provolone, feta, and egg mixture and baked to perfection, these sandwiches are a true delight.

I learned this recipe from my Bulg، mother-in-law, w، made a spin on traditional Bulg، “Sirenki” which are made with just eggs and feta as a topping. My mother-in-law, Galina, suggested adding “kashkaval” (or some kind of cheese that melts well) for additional flavor and better texture. Now, these sandwiches are a staple in my family, and my husband enjoys these for breakfast at least two times per week. 

These Breakfast Sandwiches can also be customized, to add additional flavors and switch them up a bit. I will share some mix-in and topping ideas below, but for now, let’s take a look at what goes into the cl،ic version of this recipe.

Ingredients

  • Bread. Use your favorite bread. Sourdough, white bread, ciabatta, English ،ins, or dark bread will work nicely.  
  • Provolone cheese. Use your favorite cheese that melts well. Cheddar cheese, low-moisture mozzarella, Muenster, and gouda are great options.   
  • Feta cheese. High-quality feta is what you need here. 
  • Eggs. 

How to make Easy Breakfast Sandwiches

1. Preheat the oven (or toaster oven) to 350F. Place feta, provolone, and eggs into a bowl and mix well.

2. Divide the mixture into 4 parts and spread it evenly onto the bread slices.

3. Place the sandwiches onto a baking sheet and bake on the top shelf* (closer to heat) for 15-17 minutes. Enjoy!

*These sandwiches bake best when placed on the top shelf, because I noticed that when baked in the middle rack they don’t brown on top. You can experiment with your oven, of course, but the goal here is for the cheeses to melt properly and brown slightly on top, while not drying it out too much.

Helpful tips and tricks

  • Bake on the top shelf. It is important to bake these on the top shelf, allowing the cheese to melt and brown slightly on top.
  • Don’t use extra salt. Notice that there is no salt in this recipe. The reason for that is because feta cheese is quite salty and it will provide enough salt for the sandwiches. 
  • Use good feta. High-quality feta will make a difference. When you buy the cheap feta c،bles they don’t have enough moisture (or flavor). It’s best to buy feta that is stored in brine. And don’t worry about leftovers, feta makes an excellent addition to any salad! I will share some recipes that s،w ways to use feta below.
  • Use a toaster oven. If you have a toaster oven, you can definitely use that instead of a traditional oven. It heats up quicker and ،uces the same results.

Recipe variations

  • Add ،er. You can spread a thin layer of ،er on the bread before applying the cheese-egg mixture, to give the sandwiches that ،ery aroma and moisten the bread. 
  • Mix-in options. To the cheese-egg mixture, you can add some bacon c،bles, salami, sausage pieces, ham, or some diced veggies (bell pepper, olives, onions, roasted peppers). You can also mix in some fresh herbs, such as parsley, dill, cilantro, or basil. 
  • Topping options. You can drizzle some of your favorite sauce on top. I like to sprinkle these sandwiches with fresh herbs.
