How To Make Zuc،i Lasagna Roll Ups

Don’t add too much filling so that the zuc،i roll ups don’t open in the oven. Scroll to the recipe card at the bottom of the post for more detailed instructions.

  • Prep the oven. Preheat the oven to 400F. Spread a cup of tomato sauce along the bottom of an 8×8″ baking dish.
  • Season it. Place the zuc،i on a paper towel to absorb excess moisture. Season with salt and pepper. Let it sit for 20 minutes.
  • Brown the beef. Add the oil and ground beef to a large pan over medium-high heat. Use the spatula or a wooden s، to break up any large c،ks. Cook the beef until slightly browned.
  • Season it. Stir in the garlic powder, basil, parsley, oregano, fennel seeds, and salt. Cook for another 2 minutes. Add the sauce and mix until well combined and heated through. Set it aside.
  • Make the cheese mixture. Combine the cheese filling ingredients in a separate bowl. Set it aside.

  1. Preheat to 400 degrees F.
  2. Line counter top with paper towel. Place zuc،i slices on paper towel. Lightly season with salt and let sit for 20 minutes. (this will help draw out the liquid from the zuc،i)
  3. In the meantime, heat a large s،et to medium high heat. Add g، seed oil and ground beef. Saute until slightly browned, making sure to break up the beef along the way.
  4. To the pan add in garlic powder, basil, parsley, oregano, fennel seeds and salt. Mix all the ،es in with the beef and cook for 2 minutes.
  5. Pour the pasta sauce in with the seasoned beef and cook for 5 minutes. Set aside.
  6. To a small bowl add ricotta cheese, 1 teas، garlic powder, 1 teas، oregano and shredded mozzarella. Using a s، mix everything together.
  7. To an 8×8 baking dish. Pour 1 cup of the sauce on the bottom. Spread out evenly so the sauce covered the entire bottom.
  8. Add 1 teas، of the cheese mixture to one end of the zuc،i slice. Gently spread out on the slice and then roll the zuc،i slice up to form a roll. Place prepared zuc،i lasagna roll up in the prepared baking dish. (place it vertical so it almost looks like little roses, not on the flat side)
  9. Continue this process until zuc،i slices and cheese is gone.
  10. Cover with remaining tomato sauce.
  11. Place in oven and bake for 20 minutes.
  12. Remove the zuc،i lasagna from oven and sprinkle with 1/3 cup shredded mozzarella cheese. Place back in oven and bake an additional 5 minutes or until cheese is melted.
  13. Remove from oven and serve. (optional: garnish with fresh basil)
