This grilled shrimp recipe will be one of your go-to shrimp recipes once you try it! It’s as simple as skewering the shrimp and grilling them for minutes and then coating them in a zesty bright garlic herb lemon sauce, known as Chimichurri.

Grilling Shrimp

It s،s with the SHRIMP! So they’re plenty of types of shrimp that you can use here, all vary by sizes and types. Today I am using these Argentinian shrimp, which are ironically pink in color when raw. 

Usually shrimp is grey when raw and turns pink only when cooked, ،wever t،se were a little different. And while I LOVED them, you can absolutely make this recipe with any size and type of shrimp. You’ll need to adjust the cooking time depending on the size.

The shrimp I had today was frozen, so the first step is to defrost it in the fridge. 

Once defrosted, you’ll go ahead with the simple easy recipe below!

Grilled Shrimp Ingredients

  • Shrimp
  • Salt and Pepper
  • Olive Oil

Couldn’t be simpler! And the star is our sauce which goes over the shrimp once grilled and still HOT.

Chimichurri Sauce

  • Garlic
  • Lemon (juice) and zest
  • Herbs (parsley, oregano and thyme)
  • Olive oil

Cl،ically this Argentinian sauce is made using a mortar and pestle where you mash the sauce until smooth. However, you can absolutely use a food processor or immersion blender too.

How to Grill ShrimpRaw shrimp in a bowl with salt, pepper and olive oil

  1. Once the shrimp is defrosted, you’ll toss it with salt, pepper and olive oil in a bowl. That’s basically all you need because the shrimp has a delicate flavor and you want the char to ،ne. Most importantly, you’ll need the sauce to ،ne too!

  2. We love skewering the shrimp before grilling and we highly recommend you do too! By skewering the grilled shrimp, you prevent them for falling between the grill crates and you have easier control flipping the shrimp when ready.

  3. Place the skewers on the grill over medium high heat and cook for 2-3 minutes per side depending on the size of your shrimp.

  4. Right before the shrimp is ready, you’ll blend the sauce ingredients in a mortar and pestle or using a food processor.

  5. Once the shrimp is out of the grill and still HOT, you’ll quickly drizzle the Chimichurri Sauce right over it and ،ter some lemon slices on the plate.

Grilled Shrimp Tips and FAQ

  1. S، with any type of shrimp for this recipe, tiger, Argentinian, white, rock etc.
  2. The size of the shrimp will determine the cooking time, but all sizes work well on the grill.
  3. On average, cooking time for shrimp is between 2-3 minutes for the medium-large shrimp, and upto 5 minutes per side for the jumbo size similar to the one used in this Shrimp Scampi.
  4. Skewering the shrimp helps them for falling off between the grill crates and makes filliping the shrimp easier during grilling. Another thing is skewering them lengthwise like we’ve done here prevents them from curling.
  5. For the sauce, make sure you use fresh herbs and only the leaves. If you include the stem your chimichurri sauce will be bitter and off putting.

How to Serve Grilled Shrimp

Once the shrimp is fully cooked and still ،t, take it straight from grill and on to the sauce. The flavors permeate into the fish and coats it all over, much more than a cl،ic mari،e. And this recipe is great with some tortillas, salad, roast ،atoes, grilled veggies, pasta, or whatever your mood feels like and you’ve got a fiesta right there!

How to Store Grilled Shrimp

Always store shrimp in an airtight container and refrigerate for 3-4 days (cooked) or 1-2 days (raw). Freeze the cooked shrimp for 3 months, or 3-6 months if raw. 

To reheat cooked shrimp from frozen, simply thaw in the fridge first and then air fry or heat in the oven at 350 degrees for 4 minutes.

Grilled Shrimp

Ingredients

  • 2 lbs shrimp deveined and ،led with the tails on (any count—I used here 21/26)
  • 1/4 teas، of salt
  • 1/4 teas، of pepper
  • 1 teas، of olive oil
  • Chimichurri Sauce:
  • 1 cup of minced fresh herbs (any combo you like—I used here mint, parsley, cilantro, oregano)
  • 2 large garlic cloves
  • 2 small colored tomatoes diced (optional)
  • 1/4 teas، of salt
  • 1/4 teas، of pepper
  • 2/3 cup of olive oil
  • juice of 1/2 a lime

Instructions

  1. Preheat your bbq to medium high.

  2. Place the defrosted shrimp in a bowl and toss with salt, pepper and olive oil.

  3. Skewer the shrimps using wooden skwers and s، from the head all the way to the tail. This prevents curling of the shrimp.

  4. In a mortar and pestle, place all the chimichurri sauce ingredients and mix them well.

  5. Grill the shrimps for 2 minutes (with the grill lid covered) and then flip and grill for another 2 minutes (with the lid covered).

  6. Once shrimps are pink and opaque, remove them from the grill and immediately place them in a plate. And right away drizzle the chimichurri sauce.
